Aniseed Myrtle & Raspberry Jam: A Native Australian Food Recipe

A Simple Aniseed Myrtle Native Food Delight

Ingredients

  • 250g Raspberries
  • 250g sugar
  • 1 tablespoon of lemon juice
  • 1 teaspoon Terrablendz Aniseed myrtle

Method:

  • First, place a small plate into the freezer.
  • Secondly, wash the jar for the jam, lid, and components in hot, soapy water and rinse thoroughly to remove any soap residue.
  • Thirdly, preheat the oven to 110°C and position the clean, wet jars upside down on a baking sheet, along with lids. Bake for 15-20 minutes for proper sterilization.
  • Grind the dried aniseed myrtle, in a herb grinder or blender, to a fine powder.
  • Place the raspberries and lemon juice into a medium sized pot. Then, bring to the boil over a medium heat.
  • Continue to boil whilst stirring occasionally for approximately 5 minutes or until the raspberries have broken down.
  • Add the sugar and dried aniseed myrtle and bring back to the boil for 4 minutes. Then, remove from the heat.
  • Remove the plate from the freezer and place a tablespoon of the jam mixture onto the cold plate. The mixture should wrinkle when you push your fingertip through it.
  • Boil for a further 2 to 3 minutes if the jam is not yet thick enough.
  • Carefully remove the sterilized jars from the oven using oven mitts and allow them to cool slightly.
  • Spoon the hot jam into the hot sterilised jars and seal.
