A Simple Aniseed Myrtle Native Food Delight

Ingredients
- 250g Raspberries
- 250g sugar
- 1 tablespoon of lemon juice
- 1 teaspoon Terrablendz Aniseed myrtle
Method:
- First, place a small plate into the freezer.
- Secondly, wash the jar for the jam, lid, and components in hot, soapy water and rinse thoroughly to remove any soap residue.
- Thirdly, preheat the oven to 110°C and position the clean, wet jars upside down on a baking sheet, along with lids. Bake for 15-20 minutes for proper sterilization.
- Grind the dried aniseed myrtle, in a herb grinder or blender, to a fine powder.
- Place the raspberries and lemon juice into a medium sized pot. Then, bring to the boil over a medium heat.
- Continue to boil whilst stirring occasionally for approximately 5 minutes or until the raspberries have broken down.
- Add the sugar and dried aniseed myrtle and bring back to the boil for 4 minutes. Then, remove from the heat.
- Remove the plate from the freezer and place a tablespoon of the jam mixture onto the cold plate. The mixture should wrinkle when you push your fingertip through it.
- Boil for a further 2 to 3 minutes if the jam is not yet thick enough.
- Carefully remove the sterilized jars from the oven using oven mitts and allow them to cool slightly.
- Spoon the hot jam into the hot sterilised jars and seal.
