Why Cook with Lemon Myrtle?

Lemon myrtle is a native Australian herb known for its bright citrus notes. When paired with chicken, it lifts the dish with refreshing flavour.

Many people ask, “What herbs go well with chicken drumsticks?” The answer is lemon myrtle, because it balances richness with freshness. Saltbush and pepperberry add a savoury, peppery backbone, creating layers of taste that you can’t get from standard seasonings.

Can You Marinate Chicken Drumsticks Overnight?

Yes, and in fact it’s encouraged. Allowing your drumsticks to rest in the marinade overnight ensures the flavours soak right through. If you’re short on time, even two hours will give you delicious results, but longer marination always means deeper flavour.
